Creamy Country Leek Omelette

Serves: 2

Ingredients:

1 tsp butter

2 leeks, finely chopped

2 tbsp crème fraiche

Salt & black pepper

4 eggs

50g/2oz grated Cheddar cheese

Oil for brushing

Method:

Open the lid of the omelette maker and brush the plates with the oil.

Preheat the omelette maker and melt the butter in a pan. Add the chopped leeks into the pan and sauté until they begin to soften. Stir the crème fraiche into the pan, season well with salt and pepper and gently warm for a minute or two.

Crack the eggs into a bowl. Combine the creamy leeks from the pan with the egg mixture. Add in the grated Cheddar cheese and stir well.

Pour the mixture to the max line marked on each plate. Close the lid and cook for 4 to 5 minutes or until cooked through.
